Hospitality and Tourism Management

Hotels, resorts, restaurants, events, cruise and theme parks — the management side of the industry Florida is built on. ⚠⚠ 22 Florida public institutions award 1,745 credentials under the general code, 1,206 of them bachelor's. ⚠⚠⚠ And the education sits exactly where the industry does: FIU (667) and UCF (590) produce 72% of the state's output, which is Miami and Orlando.

The degrees this program covers
⚠⚠ THE DEGREE IS CONCENTRATED IN TWO CITIES. Of 1,745 credentials under Hospitality Administration/Management, Florida International awards 667 and the University of Central Florida 590 — together 72% of the state total, with Florida State third at 224 and Valencia fourth at 64. ⚠ That is Miami and Orlando, which is where the cruise industry and the theme parks are, and it means a student outside those two metros is choosing between relocating and a much smaller local programme. ⚠⚠⚠ AND THE DEGREE IS NOT THE GATE TO MOST OF THE INDUSTRY'S JOBS. Lodging managers report 72% of employers requiring a bachelor's — but food service managers report 30% accepting a high school diploma, 21% a postsecondary certificate and 19% an associate degree, and food service management is SEVEN TIMES the occupation by headcount at nearly identical pay. ⚠ What the bachelor's buys is the corporate and lodging side, and speed of promotion — not entry. Decide which of those you are paying for. ⚠⚠ THE SHORT CREDENTIALS ARE REAL AND THEY ARE ELSEWHERE IN THE FAMILY: Hotel/Motel Administration (52.0904) is 251 credentials at 12 institutions, ALL certificates, led by Valencia at 97 and Broward at 53; Restaurant/Food Services Management (52.0905) is 105 at 13; and the catering and hotel-restaurant codes add another 49 at 9. ⚠ Those are state-college and technical-college credentials and they are the cheap way in. ⚠ Meeting and Event Planning (52.0907) is different again — 157 credentials at just TWO institutions, 140 of them UCF bachelor's.

Careers this program leads to

Each one sets out the courses along the way, the licence or certification at the end, and the sources behind it.

Chef, Cook and Baker
⚠⚠⚠ No kitchen job needs a credential to start: restaurant cooks and bakers learn on the job, and a chef needs a high school diploma plus five or more years of experience. ⚠⚠ The pay step is from cook ($37,020 Florida median) to chef or head cook ($58,240), and it takes experience rather than a certificate. Florida's 1,200-hour culinary programme is built from courses named after the jobs (Cook, Restaurant, then Chef/Head Cook), and this page explains what it is worth.
Hospitality, Restaurant and Event Manager
⚠⚠⚠ Lodging managers earn $69,250 and food service managers $69,390 — $140 apart — but 72% of employers want a bachelor's for the first and 30% will take a high school diploma for the second. ⚠⚠ And food service management is SEVEN TIMES the occupation: 352,800 jobs against 52,000, with 42,000 annual openings against 5,400. In the industry Florida is built on, the degree buys you the smaller half at the same money.

Careers that name this program, but not as a route

Film and Video Editor
⚠ Named for a Florida reason: theme parks, cruise lines and the Orlando attractions industry run substantial in-house video teams that hire salaried, year-round and local — a different market from the film industry proper.
Small Business Owner and Entrepreneur
⚠ Named for realism about what Floridians actually start: restaurants, bars, lodging and events. ⚠⚠ They are also among the hardest to survive, and a licensed food establishment needs a certified food protection manager on staff before it opens.

Programs similar to this one

Neighbouring fields that share much of the same coursework, and often the same employers. ⚠ Read these before you commit to a major — which doors a neighbouring degree keeps open is the part no catalog tells you, and it is far cheaper to change now than later.

Business Administration and Management 45 Florida schools
⚠⚠ The substitute a great many hospitality managers actually hold, and a more portable one. A business degree with operations and finance coursework competes for the same corporate posts and is taught at far more Florida institutions. ⚠ Hospitality-specific study wins on industry knowledge and internship networks; business wins if you might leave the industry.
Marketing 21 Florida schools
⚠ Named because revenue management — pricing rooms and covers by demand — is the highest-leverage skill in this industry and is a marketing discipline. ⚠⚠ HFT2500 Hospitality and Tourism Marketing is carried by 10 Florida institutions, and the people who do it well are the ones who get promoted.
Accounting 50 Florida schools
⚠ Named for the same reason the marketing link is there: hospitality management is a margin business, and the managers who control food cost, labour cost and occupancy are the ones who move up. FSS2500 Food Service Costing and Controls is carried by 6 institutions.
Health Care Administration 24 Florida schools
⚠ Not a route, and named only as an honest comparison for a student weighing service-sector management degrees. Health care administration reaches a $123,860 median against lodging management's $69,250, is taught at 24 Florida institutions with 20 state colleges carrying the upper-division work, and is far less geographically concentrated.
Culinary Arts, Baking and Culinary Management 46 Florida schools
⚠⚠ The four-year route, and where the management rung leads. Florida awards no bachelor's in culinary arts; a hospitality management degree trains people to run restaurants, hotels and food service rather than to cook. A culinary A.S. followed by a hospitality bachelor's combines the kitchen and the management.
Entrepreneurship and Small Business 30 Florida schools
⚠ Named for realism about where Florida's small businesses actually are: restaurants, bars, lodging and events are among the commonest things people start in this state, and they are also among the hardest to survive. ⚠⚠ The food-safety manager certification is a legal requirement for a licensed food establishment.
Film and Video Production 19 Florida schools
⚠ Named for a Florida-specific reason: theme parks, cruise lines and the Orlando attractions industry are substantial employers of in-house video production, and they hire differently from the film industry proper — salaried, year-round and local.
