Course Description
HUN2201, Fundamentals of Human Nutrition, is the standard introductory nutrition science course in the Florida articulation system. It treats nutrition as an applied biological science: the six classes of nutrients, how the human body digests and absorbs them, the metabolic pathways that extract and store energy, and how nutrient intake maps onto health, growth and disease risk across the lifespan.
The course sits at the 2000 level in the Statewide Course Numbering System, marking it as a lower-division course that transfers within the Florida College System and the State University System. It carries no laboratory suffix, so it is a lecture course of approximately 45 contact hours for 3 semester credits. Institutions describe its scientific footing explicitly — State College of Florida frames it as presenting "the basic fundamentals of human nutrition by application of principles in chemistry, biochemistry and microbiology," while the University of West Florida emphasises "the biochemical and physiological mechanisms of digestion, absorption, metabolic pathways, energy requirements, and nutritional status."
HUN2201 is offered at approximately 15 Florida institutions, spanning state colleges, the State University System, and independent colleges. That breadth reflects its dual role: it satisfies a science or social-science distribution requirement for general students at some institutions, and it is a named prerequisite or core requirement in nursing, dietetics, exercise science, athletic training, public health and health-science programmes at others.
A naming caution. The course travels under several titles. Pasco–Hernando State College lists HUN2201 as Science of Human Nutrition; other catalogs use Fundamentals of Nutrition. These are the same SCNS course. Separately, several Florida colleges do not offer HUN2201 at all and instead teach a 1000-level parallel — Gulf Coast State College, for example, offers HUN1001 (Survey of Nutrition) and HUN1201 (Principles of Nutrition). HUN1201 is the closer equivalent, but it is a different SCNS number and a receiving institution is not obliged to treat it as HUN2201. Students planning to transfer into a programme that names HUN2201 specifically should confirm which number their programme requires before enrolling.

Position in the curriculum
HUN2201 is a first- or second-year course. It generally has no science prerequisite at Florida College System institutions, where it functions as an A.A.-applicable science or general-elective course, but it is prerequisite-gated at some universities — the University of Florida, for instance, requires one of BSC2005, BSC2007, BSC2010, CHM1025, CHM1030, CHM2045, APK2100C or APK2105C. It is far more often a prerequisite to something than a course with prerequisites of its own: nursing, dietetics, exercise science and health-science programmes routinely name it as an admission requirement.
Transfer and articulation
As a 2000-level SCNS course, HUN2201 carries the statewide guarantee: a Florida public institution must accept it as equivalent to its own HUN2201. Two practical cautions. First, general-education applicability is not guaranteed by SCNS — whether HUN2201 satisfies a general-education science or social-science requirement is an institutional decision, and it does not count toward the general-education core at every school. Second, the 1000-level nutrition courses (HUN1001, HUN1201) are different numbers and do not carry HUN2201's equivalency; if a target programme names HUN2201, take HUN2201.
Course format
The course is lecture-only with no laboratory component, typically 45 contact hours over a standard term. Online and hybrid sections are very common — this is one of the most frequently offered fully online science courses in the Florida College System. Most sections include a multi-day personal dietary analysis project, which is the assignment students most often report as the course's most useful work.
Certification and licensure context
HUN2201 confers no credential on its own. In Florida, the titles "dietitian/nutritionist" and "nutrition counselor" are regulated under Chapter 468, Part X, Florida Statutes, and administered by the Council of Dietetics and Nutrition within the Department of Health. Students should understand early that unlicensed nutrition advising for compensation is restricted in this state, and that the many unregulated "nutritionist" certificates sold online do not satisfy Florida law.
Prerequisites narrative
Prerequisites vary by institution and are the single most common source of transfer friction on this course. Students should confirm both the prerequisite for the section they intend to take and the prerequisite chain of the programme they intend to enter — a nursing programme may require HUN2201 and the anatomy and physiology sequence, and the sequencing between them matters for cohort admission dates.

AI Integration
Nutrition is an area where AI tools have reached the general public well ahead of professional consensus, which makes this course an unusually good place to build judgement about them.
Where AI genuinely helps. Nutrient-analysis apps increasingly use machine-learning image recognition to estimate portion sizes and identify foods from photographs, which lowers the burden of dietary recall — historically the weakest link in nutrition assessment. Large language models are useful for restating a concept in different terms, generating practice questions, and drafting meal plans that a student then checks against the DRIs.
Where AI fails, and why it matters here. Language models generate numeric nutrient values that look authoritative and are frequently wrong; they do not query USDA FoodData Central unless explicitly connected to it. They reproduce popular diet claims with the same fluency as evidence-based ones, because both are abundant in their training data. They cannot assess an individual, and they do not know a patient's medication interactions, renal function or allergy history. Portion estimation from images remains error-prone for mixed dishes and for anything with hidden fat or added sugar.
The practitioner's responsibility. Anyone who gives nutrition advice owns the advice, whatever produced the draft. The professional standard is to verify nutrient figures against USDA FoodData Central or an equivalent database, to check any clinical claim against the current Dietary Guidelines or peer-reviewed evidence, and to recognise that a confident answer from a chatbot has no evidentiary weight. This is the same evaluation skill the course already teaches for supplement marketing and celebrity diet claims — AI has simply raised the volume and the polish of the material to be evaluated.
Academic integrity. The personal dietary analysis is a first-hand data-collection exercise; fabricating or AI-generating the intake record defeats its purpose entirely. Institutional policy on AI use varies by instructor and by assignment, so students should read the syllabus rather than assume.
