Course Description
Sports Nutrition introduces human nutrition and its relationships to athletic performance, fitness, and health, and presents scientifically based sports nutrition recommendations for the active person and the trained athlete.
Within the SCNS taxonomy, HUN is the Human Nutrition prefix. Daytona State publishes this at 3 credits, offered fall and spring, giving approximately 45 contact hours — the value carried by the published HUN1201 "Human Nutrition" at the same college.
The phrase "scientifically based" in the catalog description is doing real work. Sports nutrition is one of the most misinformation-saturated fields a student will encounter: it is surrounded by a supplement industry with enormous marketing budgets and minimal pre-market regulation, by coaches passing on folklore, and by social media content that is frequently indistinguishable from advertising. The most valuable thing this course can teach is how to tell a claim from evidence — which is a skill that outlasts any specific recommendation.

- Registered dietitian nutritionist — the licensed path; requires an accredited programme, supervised practice, and the RD examination, with a graduate degree now required for eligibility. This is the only route to providing individualized nutrition therapy.

Special Information
⚠⚠ Scope of practice: who may give nutrition advice in Florida
- Florida licenses dietitians and nutritionists under Chapter 468, Part X, F.S., administered by the Department of Health. Providing individualized medical nutrition therapy is a licensed activity, and doing it without a licence is unlawful practice.
- General nutrition education is different from individualized therapy. Explaining what carbohydrate does, sharing published guidelines, and pointing someone to a credible source is education. Assessing an individual, diagnosing a nutritional problem, and prescribing a plan is practice.
- Certifications sold online do not confer legal authority. A "sports nutrition certification" purchased in a weekend does not license anyone to do anything, however professional the certificate looks.
- Personal trainers work within a defined boundary, and the professional bodies say so explicitly. Staying inside it protects your clients and your career.
- Refer. Disordered eating, medical conditions, medication interactions, pregnancy, and paediatric cases all belong with a registered dietitian or a physician. Knowing when to refer is a professional competency, not an admission of limitation.
- Rule 11 applies — Florida's licensure statute and its exemptions have been amended, and the boundaries around health coaching are actively contested. Verify current requirements with the Florida Department of Health.
⚠⚠ Supplements: unregulated before sale, and genuinely contaminated
- Dietary supplements are not approved by the FDA before sale. Under DSHEA, manufacturers are responsible for safety and labelling, and FDA action is generally post-market. "On the shelf" means nothing about efficacy or purity.
- Contamination and adulteration are documented and common. Independent testing has repeatedly found products containing undeclared stimulants, anabolic agents, and prescription drugs, as well as products not containing what the label claims.
- Athletes are subject to strict liability under anti-doping rules. A positive test is the athlete's responsibility regardless of whether a contaminated supplement caused it, and careers have ended this way. This is the single most consequential fact in the course for any competitive athlete.
- Third-party testing is the practical mitigation — NSF Certified for Sport and Informed Sport test batches against banned-substance lists. It reduces risk substantially; it does not eliminate it.
- Very few supplements have strong evidence. The short list with reasonable support for performance in specific contexts includes creatine monohydrate, caffeine, beta-alanine, sodium bicarbonate, and nitrate/beetroot juice — and each works in particular circumstances rather than universally. The AIS framework classifies supplements by evidence strength and is the best free guide.
- Most of the market is not on that list. Fat burners, testosterone boosters, and proprietary blends are where the marketing spend concentrates and the evidence does not.
- "Proprietary blend" means the doses are hidden, which usually means they are below effective levels.
- Natural does not mean safe. Ephedra was natural, and it was withdrawn after deaths.
- Food first. An athlete eating inadequately will not be rescued by a supplement, and the return on fixing total energy intake, carbohydrate availability, and sleep dwarfs anything in a tub.
- Rule 11 applies — prohibited lists change annually and supplement evidence evolves. Check USADA's Global DRO and current position stands.
⚠⚠ Energy availability, RED-S, and disordered eating — recognize and refer
- Low energy availability is the underlying problem: not enough energy left over for normal physiological function after exercise. It arises from intentional restriction, from disordered eating, or simply from failing to increase intake as training load rises.
- Relative Energy Deficiency in Sport (RED-S) describes the consequences, which extend well beyond bone and menstrual function to immune, cardiovascular, metabolic, psychological, and performance outcomes. It affects athletes of any gender.
- The female athlete triad — low energy availability, menstrual dysfunction, and reduced bone density — is the older framing and remains clinically important. Menstrual irregularity in an athlete is a red flag, not a normal training adaptation, and that misconception is widespread and harmful.
- Stress fractures are frequently the presenting sign and should prompt questions about energy intake rather than only about training load.
- Some sports carry elevated risk — those emphasizing leanness, aesthetics, or weight class. That is a reason for vigilance, not for accepting it as normal.
- Language matters and coaching language does harm. Public weigh-ins, body composition comments, and moralizing about food ("clean," "cheat," "earning" a meal) are associated with disordered eating and have no performance benefit.
- Know the warning signs and know your limits. Preoccupation with food or weight, rigid rules, exercising through injury, social withdrawal around eating, and unexplained performance decline. Eating disorders have among the highest mortality rates of any mental illness, and they require specialist treatment.
- Refer without delay to a registered dietitian, physician, or mental health professional. NEDA maintains a free helpline and screening tools. Do not attempt to manage this within a coaching relationship.
- Frame nutrition around adequacy and performance, not restriction. Most athletes underfuel; that is the more common problem by a wide margin.
⚠ Hydration in Florida is not a generic topic
- Florida's heat and humidity change the calculation. High humidity impairs evaporative cooling, which is the body's principal heat loss mechanism during exercise — so the same workload is substantially more dangerous here than in a dry climate at the same temperature.
- Exertional heat stroke is a medical emergency and is a leading cause of death in young athletes. Rapid whole-body cooling — ideally cold water immersion — before transport is the standard of care, and delay costs lives. Altered mental status with high core temperature is the presentation.
- Heat acclimatization takes one to two weeks of progressive exposure, and the highest-risk period is the first days of preseason. Florida high school and college programmes operate under acclimatization policies for exactly this reason.
- Sweat rates vary enormously between individuals, and so does sodium concentration. Generic fluid recommendations are a starting point; measuring weight change across a session is the practical individual method.
- Both dehydration and overdrinking are dangerous. Exercise-associated hyponatremia — from drinking more fluid than is lost, particularly plain water over long durations — has killed endurance athletes, and it presents confusingly like dehydration. Drink to thirst rather than to a schedule for most people.
- Sodium replacement matters in prolonged exercise in heat, which is exactly the Florida endurance context.
- Urine colour is a rough guide only, and it is confounded by supplements and by recent drinking.
- Sports drinks are useful in specific circumstances — prolonged or intense exercise, heat, and multiple sessions — and are unnecessary calories for a thirty-minute gym session.
⚠ Evaluating claims — the skill that outlasts the syllabus
- Ask who is selling something. Most nutrition content online is marketing, and undisclosed sponsorship is common despite FTC disclosure requirements.
- Prefer position stands and systematic reviews to single studies, and single studies to anecdote. The Academy/ACSM joint position stand and the ISSN stands are free and are what practitioners actually cite.
- Check the population. A result in untrained subjects may not apply to trained athletes, and a rodent study is not a human recommendation.
- Check the dose and the duration. Many supplement claims rest on doses far above what the product contains.
- Beware mechanism arguments. "It increases X, and X is involved in performance, therefore it improves performance" is a hypothesis, not a finding.
- Extraordinary claims need extraordinary evidence, and anything promising rapid transformation is selling.
- Individual variation is real and is not a licence to ignore evidence; it is a reason to test an approach systematically on yourself rather than to adopt whatever is trending.
- Sports nutrition science genuinely changes. Recommendations on carbohydrate periodization, protein distribution, and several supplements have shifted materially in recent years. Rule 11 applies — check the current position stands rather than a textbook.
How Florida course levels affect transfer
The first digit of an SCNS number denotes the year of offering, not transferability. Courses at the 1000 and 2000 levels transfer transparently between Florida public institutions, and 3000 to 4000 is unproblematic since both are upper division. The boundary that actually matters is 2000 to 3000, where lower-division credit generally cannot satisfy an upper-division requirement.
HUN1270 is 3 credits and approximately 45 contact hours, offered fall and spring. Expect a dietary analysis assignment and probably a supplement or claim evaluation exercise — both of which are genuinely useful, and the supplement evaluation in particular is a skill worth keeping.
As a 1000-level course it transfers on the ordinary lower-division basis between Florida public institutions, and it is a common elective in exercise science, health science, and athletic training pathways. Confirm how it applies at your intended receiving institution — some programmes require the general nutrition course (HUN1201) specifically rather than the sports variant.
