Course Description
Food Production III and lab focuses on the art of advanced food preparation. Students develop proficiency in creating garde manger, charcuterie, entrées, and desserts, and instruction emphasises executing full meals while applying learned food preparation and presentation methods.
Within the SCNS taxonomy, FSS is the Food Service Systems prefix and the C suffix marks a combined lecture-and-laboratory course. Daytona State publishes this at 3 credits, offered fall and spring, with FSS1222C as prerequisite and a $150.00 laboratory fee.
"Executing full meals" is the phrase that marks this as the advanced course. Cooking a dish well is a skill; producing several dishes so that they are ready simultaneously, at temperature, plated consistently, for a whole service — that is the job. Timing, organisation, and holding under pressure are what a professional kitchen actually selects for, and they are what this course exists to build. The charcuterie content also carries the most serious food safety obligation in culinary education, which the note below sets out.
Daytona State does not publish a contact-hour figure for this course. Its C-suffixed courses run at 20 contact hours per credit — BCN1251C and FSS1222C are both live at 3 credits and 60 hours — while its unsuffixed lecture courses run at 15. This course is priced at the combined-course convention.

- ⚠ Be realistic about the entry conditions. Kitchen work means nights, weekends, holidays, heat, standing, and modest starting pay. The progression is real and it is earned over years, and knowing that in advance is better than discovering it.
Special Information
⚠⚠ Curing salts: pink is not seasoning, and confusing it has killed people
- Curing salts contain sodium nitrite, and they are dyed pink for one reason: so that nobody mistakes them for ordinary salt. The colour is a safety measure, not a marketing choice.
- ⚠⚠ Sodium nitrite is toxic in quantity. Using curing salt as though it were table salt causes serious poisoning and has caused deaths — this is the single most dangerous ingredient a culinary student handles.
- ⚠ Weigh curing salts, never measure by volume, and use a scale accurate at small quantities. Follow the formulation exactly — curing is chemistry with a narrow margin, not a recipe to be adjusted by taste.
- Store it separately, labelled, and away from ordinary salt, and never decant it into an unlabelled container.
- Know which cure you are using. Different formulations are intended for different processes, and they are not interchangeable — using the wrong one for a long-cured product is a serious error.
- ⚠⚠ The reason cures exist is botulism. Clostridium botulinum thrives in the low-oxygen, low-acid conditions of cured and vacuum-packed products, the toxin is among the most potent known, and it produces no smell, no taste, and no visible spoilage. Nitrite inhibits it — which is why the cure is not optional and why the quantity matters.
- Maintain temperature control throughout curing, and follow the process and timing precisely; a cure held too warm is a hazard, not a slower cure.
- Do not improvise charcuterie. Follow validated formulations from a reliable source, and never scale a cure by eye.
- ⚠ Never vacuum-pack and hold low-acid food without understanding the hazard. Removing oxygen removes the competition that would otherwise limit the organism.
- Document what you made, when, and to what formulation. Records are a control, and in commercial production they are required.
⚠ Kitchen safety, and how to survive service
- ⚠⚠ Burns and cuts are the routine injuries. Assume every pan handle is hot, use dry cloths — a wet cloth conducts heat and produces a steam burn instantly — and announce yourself when moving behind someone with anything hot or sharp.
- A sharp knife is safer than a blunt one, because a blunt blade slips. Cut on a stable board with a damp cloth beneath it, and never try to catch a falling knife.
- ⚠ Slips are the other constant. Clean spills immediately — the spill you walk past is the one someone falls on carrying stock.
- Know where the extinguishers are and which to use. Never put water on a grease fire, and know how the suppression system works.
- Lift properly and get help with heavy stockpots, and never carry hot liquid through a busy line without calling it.
- Mise en place is a safety practice as well as an efficiency one. A disorganised station is where people get hurt and food gets missed.
- Clean as you go. It is the habit that separates professional kitchens from chaotic ones, and it is assessed.
- ⚠ Taste constantly and with a clean spoon, and never return a used spoon to the pot.
- Take correction fast and without argument during service. The kitchen is not the place to discuss it; afterwards is — and a cook who can take a correction and adjust immediately is the one who gets promoted.
⚠⚠ Food safety is the non-negotiable part — and Florida requires certified management
- Foodborne illness is preventable and it kills people, and a kitchen's safety practice is a management responsibility rather than an individual preference.
- ⚠ Florida requires food service establishments to have a certified food protection manager, and food handler training for staff. ServSafe or an equivalent recognised certification is what employers expect, and obtaining it as a student is inexpensive and immediately useful.
- ⚠⚠ Temperature control is the core. Cold holding at or below the required temperature, hot holding at or above it, and rapid cooling through the danger zone — slow cooling of large batches is one of the most common causes of outbreaks in professional kitchens.
- Cook to the required internal temperature and verify it with a calibrated thermometer, in the thickest part — colour is not an indicator of doneness and never has been.
- Prevent cross-contamination by separation, sequencing, colour-coded boards, and cleaning between tasks — and store raw below ready-to-eat, always.
- ⚠ Handwashing is the single most effective control, and it is the one that lapses under pressure. Gloves are not a substitute for it.
- ⚠⚠ Do not work while ill. Reporting vomiting, diarrhoea, jaundice, or a sore throat with fever is a legal requirement in food service, not a courtesy — and norovirus outbreaks are overwhelmingly traced to staff who worked while symptomatic.
- Allergens are a life-safety matter. Cross-contact, not cross-contamination, is the operative concept — a shared utensil or fryer is enough — and cooking does not destroy most food allergens. If you cannot be certain, say so plainly.
- Follow HACCP principles: identify the hazards, find the critical control points, and monitor them.
- ⚠ Rule 11 applies. Florida's food code adopts and amends the FDA Food Code on a cycle — verify current requirements with DBPR.
How Florida course levels affect transfer
The first digit of an SCNS number denotes the year of offering, not transferability. Courses at the 1000 and 2000 levels transfer transparently between Florida public institutions, and 3000 to 4000 is unproblematic since both are upper division. The boundary that actually matters is 2000 to 3000, where lower-division credit generally cannot satisfy an upper-division requirement.
