Course Description
Food Production II focuses on the preparation of meats, poultry, seafood, and game, using a variety of cooking and preparation methods. It follows the food fundamentals course and is the point at which students work with the most expensive, most perishable, and most food-safety-critical ingredients in the kitchen.
Within the SCNS taxonomy, FSS is the Food Service Systems prefix and the C suffix marks an integrated lecture-and-laboratory course. Daytona State publishes this at 3 credits, corequisites FOS1201 and FSS1202C, offered fall and spring, with a $150 lab fee. Contact hours are approximately 60, matching the published FSS1202C that is its corequisite — the closest possible comparator.
Protein is where a kitchen makes or loses its money and where it most often makes people sick. The most expensive item on the plate is usually the protein, so yield, portioning, and waste control have direct financial consequences; and raw animal products are the primary vehicle for the pathogens that cause foodborne illness. Both facts run through everything in this course.

Special Information
⚠⚠ Raw protein is the highest-risk material in the kitchen
- Minimum internal temperatures are law, not preference, and they differ by product. Poultry and stuffed items are the highest; ground meat is higher than intact cuts because grinding distributes surface bacteria throughout. Learn your jurisdiction's current numbers and verify with a thermometer every time.
- Colour is not doneness. Meat can be brown and undercooked or pink and safe; the only reliable indicator is a calibrated thermometer in the thickest part, away from bone.
- Calibrate your thermometer. An ice-water check takes thirty seconds and an uncalibrated thermometer is worse than none because it is trusted.
- Cross-contamination is the mechanism behind most outbreaks. Separate boards, separate cloths, raw stored below ready-to-eat, and hands washed between raw protein and anything else.
- Thaw safely — under refrigeration, under cold running water, or as part of the cooking process. Never on the counter, however convenient.
- Marinades that touched raw protein are contaminated and must be boiled or discarded, not brushed onto cooked product.
- Cool cooked protein rapidly through the danger zone. Large roasts and stocks are the classic failures; shallow pans and ice baths are the fix.
- Vacuum packaging and sous vide change the risk profile — the anaerobic environment favours different organisms, and the technique requires validated time-and-temperature combinations rather than intuition. It is not a beginner's shortcut.
- Florida-specific: raw oyster and molluscan shellfish service carries Vibrio vulnificus risk that is genuinely elevated in warm Gulf waters, and Florida requires specific consumer advisories and shellfish tagging. Shellstock tags must be retained for 90 days. Rule 11 applies — verify current requirements with DBPR.
⚠ Yield is money — the arithmetic that decides whether a kitchen is profitable
- As-purchased weight is not what you serve. Trim, bone, fat, and shrink all remove weight you paid for, and the yield percentage is what converts a purchase price into a real portion cost.
- Edible portion cost is always higher than purchase price, sometimes dramatically. A whole fish at a low per-pound price can cost more per served portion than pre-cut fillets, and a cook who does not run the numbers will not know.
- Whole-animal and whole-fish fabrication pays only if you use the trim. Bones to stock, trim to grind or sausage, fat rendered. Otherwise the yield loss eats the savings.
- Portion control is enforced by scale, not by eye. A consistently generous cook can destroy a food cost target without anyone noticing until the monthly numbers arrive.
- Waste is visible and preventable. Over-trimming, poor rotation, and mis-cooked product are all yield losses, and instructors watch for them because employers do.
- Learn the calculations properly — yield percentage, edible portion cost, and portion cost from a recipe. They are examinable and they are the arithmetic of every kitchen management job you might later hold.
⚠ Match the method to the cut — the organizing principle of the whole course
- Connective tissue and fat determine the method. Cuts from hard-working muscles are tough and full of collagen, and they need long, moist, low heat to convert that collagen to gelatin — braising and stewing. Tender cuts from less-used muscles need fast, dry heat — grilling, sautéing, roasting.
- Applying the wrong method wastes the ingredient. A braised tenderloin is a tragedy and a grilled shank is inedible; both are expensive mistakes.
- The Maillard reaction is where roasted and seared flavour comes from, and it needs a dry surface and adequate heat. Wet protein steams instead of browning — pat it dry.
- Do not crowd the pan. Crowding drops the temperature and releases moisture, and the result is grey and steamed rather than browned.
- Carryover cooking is real and must be planned for. A large roast continues to rise several degrees after it leaves the oven, so pull it early. Resting redistributes moisture and is not optional.
- Fish and shellfish overcook in seconds, not minutes, and shellfish toughen badly. The margin is much narrower than with meat.
- Poultry has no rare option. Whatever your preference, the temperature requirement is the requirement.
- Learn to judge doneness by touch as well as temperature, but verify with the thermometer while you are learning — touch is a professional's calibrated skill, built over years against measured results.
⚠ Sourcing: sustainability and Florida seafood
- Seafood sourcing is a genuine professional decision, not a marketing exercise. Stock status, fishing method, bycatch, and aquaculture practice vary enormously by species and origin.
- NOAA FishWatch and Seafood Watch are the credible free references, and both are updated as stock assessments change. Rule 11 applies — recommendations move.
- Seafood fraud and species substitution are well documented, including in Florida. Knowing what a species actually looks like as a whole fish and as a fillet is a real defence, and buying from reputable suppliers with traceability is the practical one.
- Florida species are worth knowing by name and season — grouper, snapper, mahi, stone crab, spiny lobster, and Gulf shrimp are the state's identity on a menu, and stone crab and lobster have defined harvest seasons that constrain menus.
- Menu accuracy is a legal matter. Naming a species you are not serving is misrepresentation, and "fresh" has a meaning that previously frozen product does not satisfy.
- Whole-animal purchasing supports sustainability and margin simultaneously, which is why the practice has returned to serious kitchens.
⚠⚠ Food safety is the non-negotiable layer under everything else
- The temperature danger zone is 41°F to 135°F under the FDA Food Code as adopted in Florida, and time in that range is cumulative across the product's whole life — receiving, storage, prep, service, and cooling all count.
- Cooling is where operations fail. Hot food must be cooled through the danger zone within specified time limits, and a deep container of stock in a walk-in does not cool anywhere near fast enough. Ice wands, shallow pans, and ice baths exist for this reason.
- Cross-contamination is a physical discipline: separate boards and cloths, raw below ready-to-eat in the cooler, and hand washing between tasks rather than between shifts.
- The Big Six pathogens — Salmonella Typhi, non-typhoidal Salmonella, Shigella, Shiga toxin-producing E. coli, hepatitis A, and norovirus — are reportable and are the ones that close restaurants.
- Allergens are a life-safety issue, not a preference. The major allergens must be controlled through dedicated equipment, honest ingredient disclosure, and a kitchen culture where "is there nut in this" gets a real answer. Sesame was added as a major allergen in the United States effective 2023, and labelling requirements have continued to change — Rule 11 applies.
- Florida regulates food service through DBPR's Division of Hotels and Restaurants, with the Department of Agriculture and Consumer Services and county health departments covering other categories. A certified food protection manager is required, and employee food-handler training is required — verify current requirements with DBPR directly.
- Get ServSafe Food Protection Manager certification if you do not already hold it. It is inexpensive, portable, employer-recognized, and frequently the difference between being hired and not.
- Report your own illness. Working a shift with vomiting, diarrhoea, jaundice, or a sore throat with fever is an excludable condition under the Food Code, and norovirus outbreaks are traced back to a cook who came in anyway.
⚠ Kitchen injuries: the three that actually happen
- Cuts. A dull knife causes more injuries than a sharp one because it slides. Cut on a stable board with a damp towel underneath, use the claw grip, and never try to catch a falling knife — step back and let it land.
- Burns. Steam burns worse than boiling water; sugar and caramel burn worst of all because they stick. Assume every pan handle is hot, use dry towels only (a wet towel conducts heat instantly), and open lids away from your face.
- Slips. Non-slip shoes are not a suggestion. Spills get cleaned immediately, not after service.
- Announce yourself. "Behind," "corner," "hot behind," and "sharp" are not affectation — they are how a crowded kitchen avoids collisions.
- Mixers and slicers cause the severe injuries. Never reach into a running mixer bowl, never bypass a guard, and unplug before cleaning a slicer. These are the injuries that end careers.
- Know where the extinguisher and the hood suppression pull are, and never put water on a grease fire.
⚠ An honest account of the industry you are training for
Included because students deserve to make this choice with accurate information, not because the work is not worth doing.
- The hours are the hardest part. Bakers commonly start between two and four in the morning; restaurant cooks work nights, weekends, and holidays. Your schedule will not match your friends' or your family's, and that is the most common reason people leave.
- Entry pay is modest and rises with demonstrated skill and responsibility rather than with time served. Pastry and baking roles in hotels, resorts, cruise lines, and high-volume production generally pay better than small independent shops.
- It is physical work — standing for eight to twelve hours, lifting fifty-pound flour sacks, heat, and repetitive motion. Take care of your back, your wrists, and your feet from the start; buy the good shoes.
- The culture has been changing, genuinely but unevenly. The abusive-kitchen tradition is much less tolerated than it was, and reputable employers now treat it as a liability. You are allowed to leave a workplace that is abusive, and doing so early costs you far less than staying.
- Substance use is an occupational hazard in this industry, with late hours, high stress, and easy access all contributing. It is worth knowing that going in, and worth knowing that support exists — Ben's Friends is a food-and-beverage industry recovery community.
- Florida's advantages are real. Year-round tourism, the Orlando resort and theme-park sector, the cruise lines out of Port Canaveral, Miami and Palm Beach hotels, and a growing independent scene mean genuine demand, and hotel and resort work often carries benefits that independent restaurants do not.
- The people who thrive like making things with their hands, tolerate repetition, work well under time pressure, and take satisfaction in consistency. If that is you, it is a good life. If it is not, better to know in the first term.
Transfer, and what the credential is actually for
Culinary and baking programmes are applied. An A.S. degree does not carry the A.A.'s guaranteed junior-status transfer, and individual production courses transfer unevenly because they are laboratory-intensive and institution-specific. Get any transfer evaluated in writing.
The more important point is that this industry hires on demonstrated skill. A portfolio of finished work, a strong externship, and references from chefs who have watched you work outrank the transcript in nearly every hiring conversation. Photograph everything you produce, in good light, from the first week — it costs nothing and it becomes the thing that gets you the job.
How Florida course levels affect transfer
The first digit of an SCNS number denotes the year of offering, not transferability. Courses at the 1000 and 2000 levels transfer transparently between Florida public institutions, and 3000 to 4000 is unproblematic since both are upper division. The boundary that actually matters is 2000 to 3000, where lower-division credit generally cannot satisfy an upper-division requirement.
FSS1222C is 3 credits and approximately 60 contact hours, offered fall and spring with a $150 lab fee, and taken alongside FOS1201 Sanitation and Safety and FSS1202C Food Fundamentals — a corequisite structure that is deliberate, since the sanitation content is what makes this course safe to run. Expect practical assessment of fabrication and cookery rather than examinations, and expect knife skills to be assessed directly. It leads on to FSS1242C International Cuisine, which lists it as a prerequisite.
