Course Description
Specialty Artisan Breads is an introduction to a variety of yeasted bread doughs, the properties of ingredients, and mixing methods. Students prepare an assortment of bread products using appropriate tools and methods, and are assessed on appearance as well as execution.
Within the SCNS taxonomy, FOS is the Food Science prefix used for culinary and baking production courses. Daytona State publishes this at 4 credits — the largest single production course in the sequence — offered fall and spring, with a $150 lab fee. Contact hours are approximately 80, scaled from the published 3-credit / 60-hour baking and food fundamentals courses at the same college.
Bread is not pastry with yeast in it. It is a fermentation discipline, and the variable that dominates it — time — is one the baker manages rather than controls. A bread baker is running a slow biological process on a production schedule, which is why the trade keeps hours nobody else keeps and why the skill takes longer to acquire than its short ingredient list suggests. Flour, water, salt, and yeast, and a lifetime to get right is the standard joke in the trade because it is broadly accurate.

Special Information
⚠ Fermentation is the course — and time is the ingredient you cannot buy
- Flavour in good bread comes from fermentation, not from the ingredient list. Four ingredients produce enormous variation because of what the yeast and bacteria do over time, and long, cool fermentation produces flavour that fast, warm fermentation cannot.
- Pre-ferments are how a baker buys time. A poolish or biga made the day before contributes fermented flavour and improved dough strength to a same-day bake, and understanding them is what separates artisan practice from straight-dough production.
- Desired dough temperature is a calculation, not a hope. Professionals adjust water temperature to hit a target final dough temperature, because fermentation rate is temperature-dependent and an unmanaged dough temperature makes the schedule meaningless. Learn the DDT formula and use it.
- Florida's climate accelerates everything. A warm, humid bakeshop ferments faster than the book assumes, and a schedule copied from a northern text will over-proof. Read the dough, not the clock — and adjust water temperature down accordingly.
- Judging bulk fermentation and final proof is the hardest skill in the course. Volume increase, surface texture, and the poke test are the indicators; the clock is a guide only. Under-proofed bread is dense with a tight crumb and often bursts at the side; over-proofed bread is flat, pale, and collapses.
- Retarding in the cooler is a professional tool, not a delay — it develops flavour and makes production schedules workable, which is exactly why bakeries use it.
- Sourdough is a maintained living culture. It needs feeding on a schedule, it responds to temperature and flour, and it takes weeks to mature. A neglected starter produces sour, weak bread, and reviving one takes days.
- Plan backward from when the bread must be out. This is the practical reason bakers start at three in the morning, and learning to build a schedule is part of the course.
⚠ Shaping, scoring, and steam — where the visible quality comes from
- Shaping creates surface tension, and it is that tension that makes a loaf rise upward rather than spread outward. A slack, poorly shaped loaf will be flat no matter how good the fermentation was.
- Pre-shape, rest, then final shape. Skipping the bench rest means fighting a dough that has not relaxed, and the resulting handling degasses it.
- Handle fermented dough gently. The gas structure built over hours is destroyed in seconds by rough handling, and the open crumb people admire is largely a handling achievement.
- Scoring controls where the loaf opens. An unscored lean loaf tears wherever it wants; a scored one opens where you decided. Cut at a shallow angle with a very sharp blade in one confident motion — hesitation drags and tears.
- Steam in the first minutes of the bake is what produces oven spring and a glossy, crisp crust. It keeps the surface pliable while the loaf expands and gelatinizes the surface starch. No steam gives a dull, thick, prematurely set crust.
- Vent the steam later in the bake so the crust can dry and crisp.
- Bake dark enough. Students consistently underbake artisan loaves; the flavour is in the crust, and pale bread tastes flat. Internal temperature confirms doneness.
- Let it cool before cutting. The interior finishes setting as it cools, and cutting hot bread gives a gummy crumb — which students then misdiagnose as underbaking.
⚠ Faults are diagnostic — learn to read the loaf backward
- Every bread fault points to a stage. Dense crumb and a tight structure point to under-fermentation or weak gluten; large irregular holes under the top crust point to poor shaping; a flat, spreading loaf points to over-proofing or insufficient shaping tension; a pale crust points to insufficient bake, low sugar, or spent yeast.
- Keep a bake log — formula, dough temperature, times, and what the finished loaf looked like inside and out. This is how bakers develop judgement, and it works far faster than repetition alone.
- Cut and look at the crumb every time. The interior tells you about fermentation and handling in a way the exterior does not.
- Change one variable at a time. Adjusting hydration, temperature, and time together teaches you nothing about which one mattered.
- Ask what stage, not what recipe. The professional habit is to trace a fault to a step in the process rather than to look for a different formula.
⚠⚠ Food safety is the non-negotiable layer under everything else
- The temperature danger zone is 41°F to 135°F under the FDA Food Code as adopted in Florida, and time in that range is cumulative across the product's whole life — receiving, storage, prep, service, and cooling all count.
- Cooling is where operations fail. Hot food must be cooled through the danger zone within specified time limits, and a deep container of stock in a walk-in does not cool anywhere near fast enough. Ice wands, shallow pans, and ice baths exist for this reason.
- Cross-contamination is a physical discipline: separate boards and cloths, raw below ready-to-eat in the cooler, and hand washing between tasks rather than between shifts.
- The Big Six pathogens — Salmonella Typhi, non-typhoidal Salmonella, Shigella, Shiga toxin-producing E. coli, hepatitis A, and norovirus — are reportable and are the ones that close restaurants.
- Allergens are a life-safety issue, not a preference. The major allergens must be controlled through dedicated equipment, honest ingredient disclosure, and a kitchen culture where "is there nut in this" gets a real answer. Sesame was added as a major allergen in the United States effective 2023, and labelling requirements have continued to change — Rule 11 applies.
- Florida regulates food service through DBPR's Division of Hotels and Restaurants, with the Department of Agriculture and Consumer Services and county health departments covering other categories. A certified food protection manager is required, and employee food-handler training is required — verify current requirements with DBPR directly.
- Get ServSafe Food Protection Manager certification if you do not already hold it. It is inexpensive, portable, employer-recognized, and frequently the difference between being hired and not.
- Report your own illness. Working a shift with vomiting, diarrhoea, jaundice, or a sore throat with fever is an excludable condition under the Food Code, and norovirus outbreaks are traced back to a cook who came in anyway.
⚠ Kitchen injuries: the three that actually happen
- Cuts. A dull knife causes more injuries than a sharp one because it slides. Cut on a stable board with a damp towel underneath, use the claw grip, and never try to catch a falling knife — step back and let it land.
- Burns. Steam burns worse than boiling water; sugar and caramel burn worst of all because they stick. Assume every pan handle is hot, use dry towels only (a wet towel conducts heat instantly), and open lids away from your face.
- Slips. Non-slip shoes are not a suggestion. Spills get cleaned immediately, not after service.
- Announce yourself. "Behind," "corner," "hot behind," and "sharp" are not affectation — they are how a crowded kitchen avoids collisions.
- Mixers and slicers cause the severe injuries. Never reach into a running mixer bowl, never bypass a guard, and unplug before cleaning a slicer. These are the injuries that end careers.
- Know where the extinguisher and the hood suppression pull are, and never put water on a grease fire.
One hazard specific to bread production: repeated exposure to airborne flour dust causes occupational asthma and allergic rhinitis — "baker's asthma" is one of the best-documented occupational respiratory conditions in the world. Handle flour gently rather than dumping it, use dust-reducing practice at the mixer, and take a persistent cough or wheeze seriously rather than assuming it is a cold.
⚠ An honest account of the industry you are training for
Included because students deserve to make this choice with accurate information, not because the work is not worth doing.
- The hours are the hardest part. Bakers commonly start between two and four in the morning; restaurant cooks work nights, weekends, and holidays. Your schedule will not match your friends' or your family's, and that is the most common reason people leave.
- Entry pay is modest and rises with demonstrated skill and responsibility rather than with time served. Pastry and baking roles in hotels, resorts, cruise lines, and high-volume production generally pay better than small independent shops.
- It is physical work — standing for eight to twelve hours, lifting fifty-pound flour sacks, heat, and repetitive motion. Take care of your back, your wrists, and your feet from the start; buy the good shoes.
- The culture has been changing, genuinely but unevenly. The abusive-kitchen tradition is much less tolerated than it was, and reputable employers now treat it as a liability. You are allowed to leave a workplace that is abusive, and doing so early costs you far less than staying.
- Substance use is an occupational hazard in this industry, with late hours, high stress, and easy access all contributing. It is worth knowing that going in, and worth knowing that support exists — Ben's Friends is a food-and-beverage industry recovery community.
- Florida's advantages are real. Year-round tourism, the Orlando resort and theme-park sector, the cruise lines out of Port Canaveral, Miami and Palm Beach hotels, and a growing independent scene mean genuine demand, and hotel and resort work often carries benefits that independent restaurants do not.
- The people who thrive like making things with their hands, tolerate repetition, work well under time pressure, and take satisfaction in consistency. If that is you, it is a good life. If it is not, better to know in the first term.
Transfer, and what the credential is actually for
Culinary and baking programmes are applied. An A.S. degree does not carry the A.A.'s guaranteed junior-status transfer, and individual production courses transfer unevenly because they are laboratory-intensive and institution-specific. Get any transfer evaluated in writing.
The more important point is that this industry hires on demonstrated skill. A portfolio of finished work, a strong externship, and references from chefs who have watched you work outrank the transcript in nearly every hiring conversation. Photograph everything you produce, in good light, from the first week — it costs nothing and it becomes the thing that gets you the job.
How Florida course levels affect transfer
The first digit of an SCNS number denotes the year of offering, not transferability. Courses at the 1000 and 2000 levels transfer transparently between Florida public institutions, and 3000 to 4000 is unproblematic since both are upper division. The boundary that actually matters is 2000 to 3000, where lower-division credit generally cannot satisfy an upper-division requirement.
