Course Description
Dessert Production and Presentation illustrates the fundamentals of pastry and dessert production and plating techniques utilised in restaurants.
Within the SCNS taxonomy, FOS is the Food Service and Culinary Management prefix. Daytona State publishes this at 4 credits — the largest in this group — with a $150.00 lab fee, offered fall and spring, giving approximately 80 contact hours at the prefix's production convention.
Restaurant pastry is a different discipline from bakery pastry, and the word "plating" is what distinguishes it. A bakery produces finished items in advance; a restaurant assembles a dessert to order, in minutes, during service, from components made earlier — and it must arrive at the table looking composed and at the right temperature. That constraint shapes everything: what can be made ahead, how it is stored, how it is assembled under pressure, and how the plate is designed so it can be executed quickly and identically fifty times a night.
Daytona State does not publish a lecture and laboratory split for its FOS courses. The prefix runs at two conventions: production courses at approximately 20 contact hours per credit — FOS1142 and FOS2147 at 3 credits and 60 hours, FOS2161 at 4 credits and 80 — and lecture courses at 15, as FOS1201 (Sanitation and Safety) at 3 credits and 45 hours. Every production course in this prefix also carries a $150 laboratory fee, which is the institution's own signal that a course consumes kitchen time and ingredients. This is a production course and is priced accordingly.

- ⚠ Be realistic about the entry conditions. Bakery work means very early starts, physical demands, and modest starting pay; the progression is real but it is earned over years, and knowing that before committing is better than discovering it.
Special Information
⚠ Design the dessert so it can be made the fiftieth time as well as the first
- A dessert that is beautiful once and cannot be reproduced under pressure is a failed design, not a triumph. Restaurant pastry is judged on the fiftieth plate of the night.
- Think in components made ahead. During service you assemble; you do not cook from scratch. The design decision is what can be prepared in advance and held well.
- Count the steps at the pass. Every element added at plating costs seconds and invites variation — a dessert with nine components will not survive a busy Saturday.
- Height, sauce, and delicate garnish are where plates go wrong under pressure. Something that must be placed with tweezers will be placed badly at speed.
- Standardise the plate. A photograph or a diagram at the station is normal professional practice and it is how consistency is achieved across a team.
- Balance more than flavour — a good dessert has contrast in texture and temperature as well, and a plate of three soft sweet things is monotonous however good each is.
- Something acidic or bitter rescues a sweet plate, and this is the adjustment beginners most often omit.
- Taste everything before service, every day. Components change as they sit.
- Keep the plate clean. Smears and fingerprints undo the work, and wiping the rim is not optional.
⚠⚠ Custards, creams, and ice creams are the high-risk items in the section
- Egg and dairy preparations are exactly the products food safety rules exist for, and a pastry section handles them constantly.
- Cook custards to a safe temperature and verify with a thermometer rather than by appearance.
- ⚠ Cooling is where it goes wrong. A large batch of pastry cream left to cool at room temperature spends hours in the danger zone. Divide into shallow containers, use an ice bath, and get it cold quickly.
- Label and date everything, and hold to your establishment's shelf life rather than judging by smell.
- Ice cream bases must be pasteurised and cooled correctly, and the freezing step does not make an unsafe base safe.
- Whipped cream and mousses are held cold, always, and time out of refrigeration during service is time that counts.
- Never re-serve or reincorporate returned product.
- Clean and sanitise ice cream machines properly — they are a known contamination risk and cleaning them is tedious enough that people cut corners.
⚠⚠ Food safety — the failures that close bakeries
- Florida food service establishments are regulated by DBPR's Division of Hotels and Restaurants, with certified food manager and trained food handler requirements. ⚠ Verify current certification requirements — they are set by rule and they change.
- Get a food safety manager certification such as ServSafe while you are studying. It is inexpensive, employers ask for it by name, and it is frequently a condition of employment.
- Temperature control is the core discipline. Know the danger zone, know the safe holding temperatures, and measure rather than assume — a calibrated probe thermometer is a professional's tool.
- Cooling is where bakeries fail inspections. Custards, creams, and fillings must pass through the danger zone quickly, and a large batch left to cool at room temperature does not.
- Dairy, egg, and cream fillings are the high-risk items in a bakery, and they need time and temperature control.
- Prevent cross-contamination — separate boards, sanitised surfaces, and no raw egg contact with finished product.
- Wash hands properly and frequently, and never work while ill; reporting illness is a requirement, not a courtesy.
- Date and label everything, and rotate stock first in, first out.
- Pest control and cleaning schedules are inspected, and flour and sugar attract pests.
- Chemicals never near product, and never in an unlabelled container.
⚠⚠ Allergens in a bakery — a bakery contains almost all of them
- A bakery is close to a worst case for allergen management. Wheat, eggs, milk, tree nuts, peanuts, soy, and sesame are all routine ingredients, and flour becomes airborne and settles on everything.
- ⚠⚠ Food allergy reactions can be fatal, and the quantity required can be tiny. This is not a preference to be accommodated politely; it is a safety matter.
- Cross-contact is the mechanism, not cross-contamination. A clean-looking bowl, a shared sieve, a piping bag, or a rack above a nut product is enough — and cooking does not destroy most food allergens.
- Dedicated equipment and separated preparation are the only reliable controls where a product is being made for someone with an allergy. Washing helps; it does not guarantee.
- Know your ingredients completely, including what is in a purchased mix, a chocolate, or a flavouring — and reread labels, because formulations change without notice.
- Never guess. If you cannot be certain a product is safe for a customer with an allergy, say so plainly rather than reassuring them. An honest "I can't guarantee that" is professional; a hopeful yes is dangerous.
- Communicate allergens accurately to customers and to front-of-house staff, and label products where required.
- Take a stated allergy seriously every time, including when the customer seems casual about it.
- Know the emergency response and where the emergency medication is if a customer carries one.
- ⚠ Rule 11 applies — allergen labelling requirements are set by federal and state regulation and have been amended; verify current requirements.
⚠ Kitchen hazards, and the ones specific to a bakeshop
- Burns are the characteristic bakery injury — ovens, hot pans, steam, molten sugar, and hot chocolate. Sugar work is particularly dangerous because molten sugar sticks to skin and continues burning.
- Use dry cloths. A damp cloth conducts heat instantly and causes a steam burn.
- Mixers are the machine that injures people. Never put hands, tools, or a scraper into a running mixer bowl, and never defeat the guard — planetary mixers have caused serious hand and arm injuries.
- Stop equipment before adjusting it, and know where the stop is on every machine.
- Sheeters, slicers, and food processors have their own guarding requirements and their own injury histories.
- Knives are safest when sharp, cut away from yourself, and never try to catch a falling knife.
- Wet floors cause the falls. Clean spills immediately and wear proper non-slip footwear.
- Lifting matters — flour sacks, full mixing bowls, and sheet pan racks. Get help and use the equipment.
- Flour dust is combustible in suspension and it is also a respiratory sensitiser — baker's asthma is a recognised occupational disease. Handle flour to minimise dust.
- Repetitive strain is real in this trade — piping, mixing, and decorating for hours. Vary tasks where you can and report developing pain early.
How Florida course levels affect transfer
The first digit of an SCNS number denotes the year of offering, not transferability. Courses at the 1000 and 2000 levels transfer transparently between Florida public institutions, and 3000 to 4000 is unproblematic since both are upper division. The boundary that actually matters is 2000 to 3000, where lower-division credit generally cannot satisfy an upper-division requirement.
