Course Description
Introduction to Cakes explores foundational techniques in cake and dessert production, emphasising the creaming method and blending approaches. Students prepare both simple and elaborate unfilled cakes and tortes, comparing classical versus contemporary methods, and the curriculum addresses classical cakes such as the Opera torte, Linzer torte and Sacher torte, alongside glazes, ices, and moulded or cream-filled varieties.
Within the SCNS taxonomy, FOS is the Food Service and Culinary Management prefix. Daytona State publishes this at 3 credits with a $150.00 lab fee, offered spring, giving approximately 60 contact hours at the prefix's production convention.
Baking is the branch of cooking that is actually chemistry, and cakes are where that becomes unavoidable. A savoury cook can adjust by taste as they go; a cake is committed the moment it enters the oven, and everything that determines whether it works — the ratio of fat to sugar to flour to egg, how much air was incorporated, how much gluten developed — happened before then. That is why professional baking is done by weight and why the method matters as much as the ingredients.
Daytona State does not publish a lecture and laboratory split for its FOS courses. The prefix runs at two conventions: production courses at approximately 20 contact hours per credit — FOS1142 and FOS2147 at 3 credits and 60 hours, FOS2161 at 4 credits and 80 — and lecture courses at 15, as FOS1201 (Sanitation and Safety) at 3 credits and 45 hours. Every production course in this prefix also carries a $150 laboratory fee, which is the institution's own signal that a course consumes kitchen time and ingredients. This is a production course and is priced accordingly.

- ⚠ Be realistic about the entry conditions. Bakery work means very early starts, physical demands, and modest starting pay; the progression is real but it is earned over years, and knowing that before committing is better than discovering it.

⚠⚠ Weigh everything — volume measurement is why home recipes fail
- Professional baking is done by weight, and this is not pedantry. A cup of flour can vary by twenty percent or more depending on how it was scooped and whether it settled, and in a cake formula that is the difference between a good crumb and a dense one.
- Get a digital scale and use it for everything, including liquids. It is faster than measuring cups, produces less washing up, and it is the single change that most improves consistency.
- Learn baker's percentage properly. Expressing every ingredient as a percentage of flour weight lets you scale any formula, compare formulas directly, and diagnose one that is out of balance — it is the professional language of the trade.
- Record what you actually did. When a batch works, the formula and the method are worth writing down exactly; when it fails, you need to know what was different.
- Change one variable at a time when adjusting a formula, or you learn nothing from the result.
- Temperature of ingredients matters — butter at the right temperature creams properly and butter that is too warm does not, and cold eggs will break an emulsion.
- Mise en place before you start. Everything scaled, at temperature, and to hand — a cake batter will not wait while you find the baking powder.
- Trust indicators over times. Ovens vary, pans vary, and a stated bake time is a starting estimate rather than an instruction.
⚠ Diagnose your failures — every cake fault has a specific cause
- Baking failures are diagnosable rather than mysterious, and learning to read them is the fastest route to competence.
- A cake that sank in the middle was usually under-baked, over-leavened, or disturbed during baking.
- A tough, tunnelled crumb means gluten was over-developed — usually over-mixing after the flour went in.
- A coarse, crumbly texture frequently means insufficient creaming or too much leavening.
- A domed, cracked top generally means the oven was too hot, so the outside set before the centre had risen.
- A dry cake was over-baked or the formula was out of balance on liquid or fat.
- Curdled batter usually means cold eggs added too quickly to creamed fat, and the emulsion broke.
- Keep the failures and look at them properly rather than discarding them in embarrassment — a cut-open failed cake teaches more than a successful one.
⚠⚠ Food safety — the failures that close bakeries
- Florida food service establishments are regulated by DBPR's Division of Hotels and Restaurants, with certified food manager and trained food handler requirements. ⚠ Verify current certification requirements — they are set by rule and they change.
- Get a food safety manager certification such as ServSafe while you are studying. It is inexpensive, employers ask for it by name, and it is frequently a condition of employment.
- Temperature control is the core discipline. Know the danger zone, know the safe holding temperatures, and measure rather than assume — a calibrated probe thermometer is a professional's tool.
- Cooling is where bakeries fail inspections. Custards, creams, and fillings must pass through the danger zone quickly, and a large batch left to cool at room temperature does not.
- Dairy, egg, and cream fillings are the high-risk items in a bakery, and they need time and temperature control.
- Prevent cross-contamination — separate boards, sanitised surfaces, and no raw egg contact with finished product.
- Wash hands properly and frequently, and never work while ill; reporting illness is a requirement, not a courtesy.
- Date and label everything, and rotate stock first in, first out.
- Pest control and cleaning schedules are inspected, and flour and sugar attract pests.
- Chemicals never near product, and never in an unlabelled container.
⚠⚠ Allergens in a bakery — a bakery contains almost all of them
- A bakery is close to a worst case for allergen management. Wheat, eggs, milk, tree nuts, peanuts, soy, and sesame are all routine ingredients, and flour becomes airborne and settles on everything.
- ⚠⚠ Food allergy reactions can be fatal, and the quantity required can be tiny. This is not a preference to be accommodated politely; it is a safety matter.
- Cross-contact is the mechanism, not cross-contamination. A clean-looking bowl, a shared sieve, a piping bag, or a rack above a nut product is enough — and cooking does not destroy most food allergens.
- Dedicated equipment and separated preparation are the only reliable controls where a product is being made for someone with an allergy. Washing helps; it does not guarantee.
- Know your ingredients completely, including what is in a purchased mix, a chocolate, or a flavouring — and reread labels, because formulations change without notice.
- Never guess. If you cannot be certain a product is safe for a customer with an allergy, say so plainly rather than reassuring them. An honest "I can't guarantee that" is professional; a hopeful yes is dangerous.
- Communicate allergens accurately to customers and to front-of-house staff, and label products where required.
- Take a stated allergy seriously every time, including when the customer seems casual about it.
- Know the emergency response and where the emergency medication is if a customer carries one.
- ⚠ Rule 11 applies — allergen labelling requirements are set by federal and state regulation and have been amended; verify current requirements.
⚠ Kitchen hazards, and the ones specific to a bakeshop
- Burns are the characteristic bakery injury — ovens, hot pans, steam, molten sugar, and hot chocolate. Sugar work is particularly dangerous because molten sugar sticks to skin and continues burning.
- Use dry cloths. A damp cloth conducts heat instantly and causes a steam burn.
- Mixers are the machine that injures people. Never put hands, tools, or a scraper into a running mixer bowl, and never defeat the guard — planetary mixers have caused serious hand and arm injuries.
- Stop equipment before adjusting it, and know where the stop is on every machine.
- Sheeters, slicers, and food processors have their own guarding requirements and their own injury histories.
- Knives are safest when sharp, cut away from yourself, and never try to catch a falling knife.
- Wet floors cause the falls. Clean spills immediately and wear proper non-slip footwear.
- Lifting matters — flour sacks, full mixing bowls, and sheet pan racks. Get help and use the equipment.
- Flour dust is combustible in suspension and it is also a respiratory sensitiser — baker's asthma is a recognised occupational disease. Handle flour to minimise dust.
- Repetitive strain is real in this trade — piping, mixing, and decorating for hours. Vary tasks where you can and report developing pain early.
How Florida course levels affect transfer
The first digit of an SCNS number denotes the year of offering, not transferability. Courses at the 1000 and 2000 levels transfer transparently between Florida public institutions, and 3000 to 4000 is unproblematic since both are upper division. The boundary that actually matters is 2000 to 3000, where lower-division credit generally cannot satisfy an upper-division requirement.
